But back to Ann's question.... maybe you can just do the same process with the broth you are about to create as the Vietnamese do when making Pho. I am guessing they also work in an environment where growth process and meat processing procedures are in question. They dump the bones in an initial shallow pan of boiling water for about 5-10 minutes to sterilize the bone and to melt the funk away, so to speak. Then they dump that out and put the bone into water and boil for around 12 hours to extract all the richness and flavor into the broth.

Spices look great, thanks! (Just added to my shopping cart) Now I can't wait to make some Pho. Oh, and Ana at Eco Market in Marfil has found an organic ranch in Michoacan and will be getting in some bones for me next week. She can also get already prepared bone broth from same source.

If the reports regarding the aquifers in Guanajuato State are correct, how can locally grown produce be considered "organic"? There's arsenic, fluoride along with other contaminants in the water supply.

I think what's going on is that the illusion of organic does a couple of things, it makes people feel good about what they are buying and improves the economy.
