I know there's some of us in town that make and case our own links due to the dire lack in Guanajuato, but I saw this and figured I'd give em a shot and bought a couple pounds of Spanish sausage and couple packs of samplers from Erik this week. I highly recommend. I wanted some Italian to make some sausage and peppers and they offered to make up a batch but since I was in a hurry I grabbed the Spanish which was delicious and worked just fine (perfect fat to grind ratio). They also have rabbit, duck, and a couple more interesting options. Like I said, worth checking out.

Can these be found only on the weekends, or are they available during the week as well?

I'm pretty sure since ISSEG is open all week they are all well.

Their products are also available at Mercado Hidalgo, at the "Toro" carniceria, in the corner of the mercado near the carnitas stands. At times they have items on hand or you can place an order in advance.

They also run a taxi service that we used and highly recommend. Very reasonable prices to/from BJX. We arranged pick-up at BJX with Enrique - 473-129-0402 - enriksgto@hotmail.com. English spoken. I'm not connected to this business, just very impressed with their service and quality.
